Alex and I have been together for over 15 years now. We have 4 kids and as some of you may know it can get super difficult to connect and spend quality time with your husband while raising little humans.
We recently had our fourth baby boy named Lucas and we don’t get out much, because I’m not ready to leave my little baby yet. So we came up with this great idea to do Valentine date night at home, with no rushes to restaurants or getting the kids ready to go to grandmas house which is 40 minutes away from home. I just wanted a nice relax night with Alex to chat and enjoy each others company.
We crave late nights where we can just focus on each other without any interruptions.
There were so many advantages to this “date night in”; we saved lots of money, we avoided the long wait at restaurants on one of the busiest date night of the year. Win, win
Our plan was to surprise each other with a easy and quick dishes using one secret ingredient “tomatoes”
Alex and I have a great I mean great appreciate for food and cooking, we both love and enjoying cooking together and from time to time we even can get very competitive with each other. Hahaha
When cooking together we also sometimes invite our two oldest daughters to join us. They love helping and enjoy family time like this, because when we cook we can get silly and test our silly dance moves too.
I decided to make a caprese salad because it is so easy to make and it always tastes so fresh and delicious. Plus I cheated by making it the night before. I prepared my tomatoes and mozzarella and basil leaves, and the only thing I had left to do the night of our date night was my delicious reduced balsamic vinaigrette.
MY husband’s favorite thing to eat is Pizza so I figured my caprese Salad is just like a pizza, full of yummy cheese and juice tomatoes and pretty easy to eat without getting too many dishes dirty.
I was also very lucky when creating this salad because we had all the ingredients at home because the kids are a huge fan of this caprese salad, they must eat this at least twice per week.
So if you guys are in the same boat as me or simply want to try a different date night, give this one a try. Promise you guys will have a good time and also reconnect with each other too.
* 4 large campari tomatoes, sliced
* 1 lb. fresh mozzarella cheese, sliced 1/4–inch thick
* 10 to 15 leaves fresh basil
* 1 cup balsamic vinegar
* ¼ cup honey
1. To make the balsamic reduction, stir the balsamic vinegar and honey together in a small saucepan, and bring to a boil. Reduce the heat to low, and then simmer for about 10 minutes or until the mixture has reduced to 1/3 cup. Allow it to cool to room temperature before using.
2. Slice the tomatoes and mozzarella. Layer them on the plate, alternating between the two. Garnish with basil leaves. Drizzle the salad with the balsamic reduction before serving
